All of their organic pork comes from pigs that are humanely pasture-raised and free of growth agents and antibiotics. All feed is organic. They want the flavor of the pork to be the star. Good salumi is directly affected by the quality of the pork and that is why they go to great lengths to obtain the best pigs available for a superior product.

All of their dairies are located in the Pacific Coast region of Northern California, which is known for its animated and vibrant scenery – from the crystal clear rivers that flow freely into the crashing Pacific waves, to the massive redwood trees that watch over the grazing cows. There is a direct correlation between these year-round grazing cows and their nutritious milk, rich in both omega-3 fatty acids and beta-carotene, that then translates to our high-quality, award-winning Rumiano cheese.

Belfiore

We are proud to be using Belfiore's organic mozzarella in our pizzas. Belfiore Cheese Company is one of the few remaining small, family-owned cheese making operations in the Bay Area. All Belfiore products are made 100% naturally without any additives or preservatives. The operation was established in 1987 as one of first pioneers producing hand crafted Italian-style Mozzarella, Fior di Latte (or Fresh Mozzarella in water) here in America.

The dairy is designed and managed primarily with the health and happiness of their herd in mind. Their animals have access to both pasture and well-ventilated, naturally-lit indoor areas - not to mention enough space and time for loafing between milkings to make their cheesemakers jealous. We even jokingly refer to the dairy as the "country club." But don’t take our word for it; the American Humane Association endorsed their model dairy as Humane Certified with a 100 percent score.
